Abuelita’s Southwestern Egg Roll
Makes 8-9 Egg Rolls
Type: Appetizer
Ingredients:
1 cup chicken, roasted, shredded
½ cup black beans, canned, rinsed, dried with paper towel
½ cup scallions, chopped
1/2 fresh jalapeno, fine julienne
¼ red pepper fresh, fine julienne
½ cup cilantro, chopped
½ cup cheddar, shredded
Salt and pepper to taste
3ea – 12” tortillas, chili or cheese
1 egg white
Directions:
Mix all ingredients except egg and tortilla
Cut tortillas into wedges (cut like a peace sign)
Brush center corner of tortilla wedge with egg
Place about 3 Tbsp of mix in and roll up, let sit seam side down so egg can “glue” edges together.
Fry in oil at 325 until browned
Serve with guacamole, salsa or sour cream
