Abuelita’s Vegetable Pinwheels
Makes 2-3 rolls; 16-30 pieces
Ingredients:
2 wraps – any 12” Abuelita flavored wrap
½ cup cream cheese
½ zucchini, julienne
½ yellow squash, julienne
¼ red pepper, julienne
5 ea asparagus spears
3 ea scallions
1 portobella mushroom, medium, sliced ¼” thick
2-3 oz mozzarella, fresh, cut in long thin pieces
2Tb fresh herbs, chopped (basil, parsley, chives)
Directions:
Sautee vegetables separately in a little butter with salt and pepper
Keep them separate and let cool
Spread cream cheese on wraps
Sprinkle with salt and pepper and fresh herbs
Lay vegetables across the wrap
Roll up and cut into desired size pieces
